Some people on the recent Yorkshire walk asked for the recipe for the Granola bars I had made. Here it is:
Healthy Granola Bars (makes 16)
What you need:
2 cups rolled oats
1/2 cup raw sunflower seeds
1/2 cup chopped almonds (or hazelnuts, pecans, etc.)
1/2 cup pumpkin seeds
1/2 cup oat bran
1/2 cup honey
1/4 cup unrefined brown sugar
2 TBSP Flora (or equivalent)
1 TBSP sunflower oil 2 tsp vanilla essence
1/2 tsp salt 1 cup dried fruit (eg. apricots, prunes, figs, dates)
What to do:
Preheat oven to 180C or gas MK4 (gas is better as electric oven tends to dry out the bars).
Mix together oats, bran, sunflower seeds, & nuts and heat on a baking tray for about 8 minutes.
While they are warming, melt Flora, oil, salt, sugar, honey & vanilla in a pan, let it boil for a minute.
Once oats etc. have warmed remove from oven and mix with all other ingredients in a large bowl.
Grease a baking tray with Flora and transfer mixture to it, pressing down so that the surface is even.
Bake for 25 minutes.
This time works in my gas oven @ MK4 but was a bit too long in electric @ 180C. You may need to experiment with times depending on your oven.
Allow to cool, turn out of tray and cut into 16 bars.
